Candied Kumquat






*500 g Kumquat
*2 cups water
*2 cups sugar
*sugar for coating





Place sugar and water in a medium saucepan.
Bring to a boil over medium heat. Stir in Kumquats and simmer for 1 hour, or until translucent .
Remove kumquats from liquid.
Sprinkle white granulated sugar over the fruits and toss well so that each piece is lightly coated.
Transfer Kumquats to parchment paper and let stand for 24 hours ( to dry )
If desired, dip in chocolate.( optional )
