Greek Pastitsada

Pastitsada is a traditional recipe from Corfu, where it is a traditional Sunday dinner, it is sometimes called pastitsada Korfiatiki.

A casserole dish, one traditional pastitsada recipe features lean leg or shoulder of veal and macaroni, as well olive oil, minced onions, sliced garlic cloves, salt and ground black pepper, white wine, vinegar, cloves, bay leaf, cinnamon, fresh or canned tomatoes, butter, and grated kefalotyri or Parmesan cheese.

Greek Moshari Kokkinisto

Kokkinisto means ‘reddened’ and describes a dish that has been slowly cooked in a red wine and tomato sauce. It is one of the most traditional Greek dishes, more at home on the family dinner table or in a low-key local eatery than in a fancy tourist restaurant. It deserves to be better known though, as kokkinisto is delicious, and offers an intriguingly complex flavour, especially when cooked with cinnamon and cloves.
