CRETAN HORTA SALAD WITH APAKI ‘SMOKED PORK
*Apaki, smoked pork, cut into small pieces
*local greens ( -Fennel – maratho, Wild leek (chive) – agriopraso, Sorrel/Dock – lapatho, Hartwort – kaukalithra, Radikia, Spinach, Dandelion,
Finely chop the salad greens and put in a large bowl.
Add the tomato and cucumber.
Mix together. Sprinkle generously with olive oil. Add lemon juice .
Season with salt and pepper and toss together gently. Empty the salad onto a serving dish and sprinkle with crumbled feta cheese ( optional )
