MEDITERRANEAN EGG WRAPS
*1 tsp dried parsley
*tomato, cut into slices
*Feta cheese, crumbled
*cucumber, cut into slices
*quinoa, cooked *salt & pepper
Whisk the eggs in a bowl, and add the mixture into a nonstick pan.
When underside is done , flip gently. Remove from pan to a plate. Place tomato, cucumber, feta cheese, quinoa onto wrap, and season with salt and pepper.
Roll it up and cut in half. Sprinkle with parsley and serve.
