GARLIC PARMESAN ROASTED CAULIFLOWER
This easy Garlic Parmesan Roasted Cauliflower is a perfect low-carb side dish for any occasion. It’s well seasoned with garlic, oregano, paprika & Parmesan.
*1 large head cauliflower
*1 onion, sliced
*3 tbsp Olive oil
*1 tsp paprika
*1 tsp oregano
*1 clove garlic, minced
*Kosher salt and freshly ground black pepper
*1 cup grated Parmesan cheese
*1 cup grated Gruyere cheese
Preheat the oven to 350 degrees. In a small bowl mix Olive oil, minced garlic, oregano and paprika, and set aside.
Remove the outer green leaves from the cauliflower and cut the head into florets, discarding the stems.
Place the florets and onion slices on a sheet pan. Drizzle with olive oil mixture and sprinkle generously with salt and pepper. Toss well.
Bake for 30 minutes, tossing once, until the cauliflower is tender and starts to brown.
Sprinkle with the Parmesan and Gruyere and bake for 2 more minutes, just until the cheese melts.
