Roasted Garlic Tomato Sauce

There is nothing nicer than the flavor of fresh tomatoes. Prepare the sauce while the pasta is cooking, no long hours of waiting. Great if you want meatless pasta.”

This homemade garlic tomato sauce is packed full of fresh summer tomatoes and roasted garlic . Simply delicious!!




*1/2 cup Olive oil
*1 tbsp butter

*6 garlic roasted cloves (minced)*

*3 cups grated tomatoes
*1/2 tsp sugar
*1 tbsp tomato paste

*½ cup water

*¼ cup dried basil

*1 tsp salt
*1/2 tsp pepper




In a large skillet add the olive oil and butter and sauté the garlic.
As soon as the aroma of the garlic begins to escape, add the grated tomatoes, tomato paste, sugar, salt, pepper and ½ the basil. Add the water and simmer for 10 min.

Meanwhile cook the pasta  in a large pot of boiling salted water until al dente.

Drain the pasta, and mix into the sauce. Reduce the heat as low as possible. Keep warm, uncovered, for about 5 minutes when it is ready to serve.









*2 or more garlic heads

*1/4 cup olive oil





Preheat oven to 180 C.

Cut top 1/4 inch off heads of garlic to expose cloves. Place garlic in small baking dish. Add oil and sprinkle with salt and pepper; toss to coat. Turn garlic cut side up. Cover tightly with aluminum foil. Bake until garlic skins are golden brown and cloves are tender, about 55 minutes. Cool. Squeeze garlic cloves from skins.
