Grilled Red Mullet

GRILLED RED MULLET

Red mullet is a light-pink fish with a jacket of scales. It has a fine and delicately flavoured, white, textured flesh. There are a couple of different types of red mullet and both are part of the goat fish family. Red mullet is unrelated to grey mullet.

Ingredients:

 
*10-15 red mullets, cleaned
*mixed fresh bay leaves, rosemary and thyme
*2 tbsp olive oil

*1½ tsp salt

*fresh lemon juice

*fresh parsley, chopped for garnish

 
Directions:

 

Place the fish on a baking tray.

In a small bowl mix olive oil, lemon juice, salt, bay leaves, rosemary and thyme.
Pour the olive oil mixture over the fish.

Preheat a grill on high. Once hot, place fish underneath and cook for about 18-20 min, or until flesh is firm and cooked through.

Garnish with fresh parsley and Serve the fish with ‘horta ‘ salad .
