LEMON HERB CHICKEN SKILLET
*4 boneless skinless chicken breasts, cut into small pieces
*1 onion, chopped
* 2 tbsp olive oil
*1 tsp mustard + juice of 1lemon
*1 tsp dried oregano
*Salt to taste
*pinch of fresh ground pepper
* 1 tbsp fresh dill, chopped for garnish
In a small bowl whisk mustard and juice of 1 lemon. Set aside.
In a large nonstick skillet heat the olive oil , and sauté the chicken and onion for 5 min.
Add the lemon – mustard mixture, oregano , chicken cubes, season with pepper and cook for 10 min or until chicken is tender.
Remove from heat, sprinkle with fresh dill and serve with rice.
