LETTUCE SALAD WITH GRILLED HALLOUMI
Α delicious, fresh and nutritious Mediterranean style salad for lunch or dinner.
*1 small head butter lettuce
*1/2 head green leaf lettuce
*1/2 head red leaf lettuce
*1 small head radicchio, core removed and thinly sliced
*1 cup cherry tomatoes, cut in half
*250 g halloumi cheese , cut into triangles
*4 tbsp Olive Oil
*2 tbsp Fig balsamic vinegar
*salt and fresh ground black pepper to taste
Tear the lettuces, wash and spin dry or dry with paper towels. Slice the radicchio, and cut tomatoes in half. Put all vegetables into a large salad bowl.
Stir together the Olive oil and balsamic vinegar’ add salt and fresh ground black pepper to taste.
Place the halloumi in a griddle pan, and give the pieces a minute or so on each side. The cheese will soften slightly as it cooks.
Toss the salad with the dressing so all ingredients are lightly coated with dressing.
To serve, place the pieces of halloumi over the salad and sprinkle with sesame seeds.
