MEDITERRANEAN LENTIL SALAD
This Mediterranean beauty is like a vacation to a Greek island without leaving your home.
The Mediterranean summer on a plate !!
*2 cups dried lentils
*2 bay leaves
*1 clove garlic, peeled and bruised
*1/4 teaspoon dried oregano
*1 tsp salt
*1/4 cup Extra Virgin Olive Oil
*2 tbsp lemon juice
*1 tbsp vinegar
*1 tsp lemon zest
*1 tsp sea salt
*Fresh thyme or oregano
Rinse the lentils well and place in a saucepan with bay leaves, 1 bruised garlic clove and oregano .
Cover with water and bring to a boil, reduce the heat to low, add the salt and simmer until the lentils are tender, 20-25 minutes.
In a small bowl whisk together the olive oil, vinegar, lemon juice, zest and salt .
Toss the lentils with the cucumber, olives and fresh thyme in a large serving bowl.
Top with feta cheese, pour the vinaigrette over salad and serve at room temperature.
Add more salt if needed.
