*1.½ Tbsp extra virgin olive oil
*1 cup fresh tomato, grated
*2 garlic cloves, minced
*2 tsp dried oregano
*300 g mozzarella, grated
*1 cup baby Bella mushrooms + 1 tbsp olive oil
*1 cup cherry tomatoes, halved
*½ cup kalamata or black olives
*fresh basil leaves
*12 tsp pepper
*1 1/2 tbsp gruyere, grated
Preheat oven to 180 C. In a small frying pan heat olive oil and sauté the mushrooms. Set aside.
Spread and shape pizza crust into a Ceramic Pizza Stone.
In a small bowl mix tomato, garlic, olive oil. Brush pizza dough evenly with tomato mixture.
Sprinkle evenly with oregano and season lightly with pepper. Top evenly with grated mozzarella, mushrooms and olives.
Bake in preheated oven for 20 min, until crust is golden.
When Pizza is done, let cool for 5 min, top with some cherry tomatoes, grated gruyere and fresh basil leaves and serve.
