GREEK STYLE OKRA LEMON
*4 tbsp Greek olive oil
*1 large onion, finely diced
*2 tbsp fresh dill, chopped
*500gr/1l pound okra (fresh & cleaned or frozen)
*1 cup water
*salt & pepper, to taste
*1 lemon, juiced
*Fresh parsley, finely chopped
In a medium pot over medium-high heat, pour 2 tablespoons of olive oil and saute the onion.
Add the okra and dill to the pot (unthawed).
Season with salt and pepper.
Stir once, do NOT stir again until okra is cooked through.
At this point lower the heat to medium.
Pour water and cover the pot with a lid and let cook for about 20 minutes or until the okra is tender.
Remove the lid, pour the lemon juice and sprinkle some parsley.
Drizzle the last 2 tablespoons of olive oil.
