Roasted Drumsticks and Potatoes

ROASTED DRUMSTICKS AND POTATOES

Ingredients

*10 chicken drumsticks
*6-8 large potatoes, cut in quarters or halves
*5-6 carrots, cut in 1-2 inch pieces
*Kosher salt
*Black ground pepper
*2 tsp dried oregano
*3-4 Tbsp  Olive Oil
*1 tbsp butter
*juice of 2 lemon
*1/2 cup warm water
*1/2 tsp red chili flakes

*1 tsp paprika

 

 

Directions

 

Preheat oven to 375F.

Thoroughly wash the potatoes & carrots with a scrubber and cut them in smaller pieces.

Rinse the chicken under running water and pat dry with paper towel.

Add chicken, potatoes and carrots to the baking dish and sprinkle with salt, ground pepper, paprika,  chili flakes and oregano.

Drizzle with olive oil and lemon juice. Toss everything to coat. Add 1/2 cup of warm water into baking dish ‘ add the butter and place in the oven.

Bake for 1 hour 20 minutes until golden brown.

Remove from the oven and serve with Greek feta cheese.
