SLOW-COOKER CHICKEN WITH VEGETABLES
*4 medium carrots, peeled and cut into pieces
*2 celery ribs, sliced
*2 zucchini, sliced
*8 baby potatoes, halved
*salt to taste
*1 tsp pepper
*1 lemon, halved
*2 garlic cloves, crushed
*1 chicken (3 to 4 pounds)
*1 tbsp dried rosemary
*1 tbsp lemon juice
*2 tbsp olive oil
*2 tsp paprika
Place carrots, celery, zucchini and potatoes in a slow cooker; toss with salt and pepper.
Place lemon halves and garlic in chicken cavity.
Place chicken over vegetables in slow cooker.
Mix rosemary, lemon juice, olive oil, paprika and salt; rub over chicken.
Cover and cook on low heat for 7-8 hours or high for 3-4 hours.
Serve garnished with parsley, if desired.
