SLOW COOKER SAUSAGE & VEGETABLES

Ingredients:

3 Zucchini
*

3 Eggplant

*4 potatoes
*3 carrots, peeled and cut into pieces
*1 onion, chopped
*2 cups mushrooms , of your choice, cut quartered
*1 package smoked sausage, cut into bite sized pieces
*½ cup chicken broth
*3 tbsp Olive oil
*2 cloves garlic, minced
*1 tbsp dried mint
*1 tsp thyme
*1 tsp oregano 
*2 tbsp fresh parsley, chopped

 

in a small bowl mix olive oil with mint, oregano, garlic and thyme. Set aside.

Rinse vegetables and cut them into medium sized pieces.

Arrange vegetables in slow cooker.

Season with salt and fresh ground pepper.

 

Add sausage to top of vegetables.

Pour the chicken broth and olive oil mixture over vegetables and sausage, cover and cook on high for 4-5 hours or on low for 6-7 hours.
Serve with Greek feta cheese.

Directions:
