STRAWBERRY CHEESECAKE PARFAITS
*500g / 17.6oz Strawberries
*1 package of Graham cracker crumbs
*2 tbsp butter, melted
*250g / 8.8oz of cream cheese
*3 tbsp powdered sugar
*1 cup heavy cream +1 tbsp powdered sugar
*1 t. lemon juice
Slice the Strawberries into a bowl and set aside.
Put the Crackers in a food processor and make them into crumbs, stir in the butter and use a fork to incorporate the butter into the cookie crumbs. In a large mixing bowl, whip heavy cream until stiff peaks form. Set aside.
In another large bowl, mix cream cheese, sugar and lemon juice until smooth.
Fold in whipped cream and the sliced strawberries.
Add a layer of cookie crumbs to the bottom of your glasses .
Top with a layer of cheesecake filling and then some more graham crumbs. Repeat layers and top with some strawberry slices and mint.
Refrigerate for 2 hours before serving
