Summer Mediterranean Salad

SUMMER MEDITERRANEAN SALAD

Loaded with fresh Mediterranean flavors !!

This dish, which is as beautiful as it is nourishing, is the perfect summer side to serve at a barbecue. It also makes a nice light lunch, or could be served alongside a toast for a hearty breakfast.

Ingredients:

*3 tbsp Greek Olive Oil
*1 tbsp freshly squeezed lime juice
*1 tsp Greek dried oregano
*1/2 tsp salt, plus more to taste
*1/4 tsp pepper, plus more to taste

*2 cups mixed greens
*1/2 onion, thinly sliced
*2 cups cherry tomatoes, halved or quartered (depending on size)
*1 cucumber, sliced
*1 avocado, halved, pitted, peeled and cut into cubes

*1 cup crumbled Greek feta cheese

*1 cup corn
*2 tbsp fresh parsley, roughly chopped

*1 egg, boiled

Directions:

In a small bowl, whisk olive oil, lime juice, oregano, salt and pepper to combine.

In a Salad bowl , arrange greens, onion, tomatoes, cucumber, avocado, egg ,feta and parsley with dressing.

Pour Dressing over salad and serve immediately .
