SUMMER NECTARINE SALAD
This simple salad pairs juicy nectarines with a vinaigrette featuring extra Virgin Olive oil. For a delicious fall salad, substitute sliced pears or apples.
*4 cups salad greens
*2 cups thinly sliced nectarines (about 2)
*1 corn steamed, kernels cut off
*1 cup feta, cubed
*1 cucumber, sliced
*1/4 cup Extra Virgin Olive Oil
*1 tbsp vinegar
*1 tsp dried mint
*salt to taste
In a small bowl combine Olive Oil, vinegar and dried mint.
Place greens, corn, feta cucumber and nectarines in a large bowl. Pour the dressing over the salad , season with salt and gently toss until just combined. Divide among serving plates.
