Baked Salmon With Vegetables






This baked salmon is incredibly flavorful, juicy and flaky. An all-star favorite salmon recipe! Oven baked salmon is an easy dinner idea.






*6 Potatoes, cut into wedges
*3 carrots, sliced
*4 salmon fillets
*2 cloves garlic (small, minced)
*1 tbsp chopped parsley
*5 tbsp Extra Virgin Olive oil
*Dash kosher salt
*Dash black pepper
*2 tsp dried oregano
*2 lemons

Preheat oven to 400 F.

Lightly grease a baking pan and place potato wedges and sliced carrots. Sprinkle with salt, pepper and 1 tsp dried oregano. Drizzle with 3 tbsp Olive oil and juice of 1 lemon.

Bake for 1 hour, until golden brown.

Remove pan from the oven and arrange salmon fillets on top of vegetables.
In a small bowl , combine the minced garlic, parsley and the remaining olive oil, and spread mixture over salmon fillets.

Sprinkle the fillets lightly with salt and freshly ground black pepper. Bake until salmon is cooked through, about 12 to 15 minutes.

Meanwhile, juice one lemon. Drizzle the baked salmon fillets with 2 tablespoons of lemon juice.

Slice the remaining lemon into wedges and serve them with the salmon.
