Ingredients :
1kg baby potatoes
1/2 cup olive oil
2 tbsp butter
2 garlic cloves, minced
1 tsp dried oregano
1 tbsp dried rosemary
1 tbsp dried thyme
salt & pepper + juice of 1 lemon
1 cup of water. Add some more if needed.
Directions
To prepare the dish, start by washing the potatoes thoroughly and slicing them in half. Subsequently, transfer the potatoes to a generously sized pot, ensuring they are entirely immersed in water, and allow them to boil over medium heat for roughly 30 minutes. Once boiled, drain the potatoes and set them aside.
Meanwhile, preheat the oven to 200C.
In a mixing bowl, combine the boiled potatoes, garlic, rosemary, oregano, thyme, olive oil, lemon juice, butter, salt, and pepper, ensuring the potatoes are thoroughly coated.
Transfer the seasoned potatoes to a baking tray and add a cup of water before placing them in the preheated oven. Allow the potatoes to bake for approximately 50 minutes until they are golden brown and crispy.
