
These ice cream sandwiches are a delightful treat with the creamy ice cream and the crunch of the petit beurre biscuits
Ingredients
2 packages of petit beurre biscuits
1 can (400g) sweetened condensed milk
500 ml heavy cream (35% fat)
1 tsp vanilla extract
Optional: Chocolate chips, nuts, or fruit pieces for variation
Directions
In a large mixing bowl, combine the sweetened condensed milk and vanilla extract.
In a separate bowl, whip the heavy cream until stiff peaks form. You can use an electric mixer for this.
Gently fold the whipped cream into the sweetened condensed milk mixture until well combined.
Optionally, fold in chocolate chips, nuts, or fruit pieces.
Line a baking dish or tray with parchment paper.
Arrange a layer of petit beurre biscuits on the bottom of the dish, leaving a little space between each biscuit.
Spread the ice cream mixture evenly over the biscuits.
Add another layer of petit beurre biscuits on top of the ice cream mixture
Cover the dish or tray with plastic wrap or aluminum foil.
Place in the freezer for at least 4-6 hours, or until the ice cream is firm.
Once the ice cream is set, remove the dish from the freezer. Let it sit at room temperature for a few minutes to soften slightly.
Cut into individual sandwiches using a sharp knife.Serve immediately and enjoy!
