Greek cuisine is celebrated for its rich flavors, fresh ingredients, and timeless recipes that bring families together. One such beloved dish is Kokinisto Kotopoulo, a traditional Greek chicken stew that embodies the heart and soul of Greek home cooking.

Kokinisto Kotopoulo, literally translating to “reddened chicken,” is a delightful stew where chicken is simmered to perfection in a fragrant tomato sauce. The dish is characterized by its vibrant red color, achieved through a blend of ripe tomatoes and aromatic spices.

Ingredients

700gr chicken breast or thighs, cut into bite-sized pieces

1/4 cup olive oil

1 large onion, finely chopped

2-3 garlic cloves, minced

1 cup diced tomatoes (canned or fresh)

2 tbsp tomato paste

1/2 cup white wine (optional)

1 cup chicken broth or water

1 bay leaf

1 cinnamon stick

1/2 tsp ground allspice

1/2 tsp ground cumin

1 tsp dried oregano

Salt and pepper to taste

Directions

Heat the olive oil in a large pot or deep skillet over medium-high heat.

Add the chicken pieces and sauté until they are golden brown on all sides.

Remove the chicken from the pot and set aside.

In the same pot, add the chopped onions.

Sauté until they become soft and translucent, about 5-7 minutes.

Add the minced garlic and cook for another 1-2 minutes, being careful not to burn the garlic.

Add the diced tomatoes and tomato paste to the pot. Stir well to combine.

Pour in the white wine (if using) and let it simmer for a few minutes until the alcohol evaporates.

Add the chicken broth or water to the pot.

Add the bay leaf, cinnamon stick, ground allspice, ground cumin, and dried oregano.

Season with salt and pepper to taste. Stir the mixture well and bring it to a gentle simmer.Return the browned chicken pieces to the pot.

Cover the pot and let it simmer on low heat for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.

Once the chicken is cooked, remove the bay leaf and cinnamon stick.

Taste and adjust the seasoning if necessary.

Serve the kokkinisto kotopoulo mpoukies over rice, pasta, or mashed potatoes.

Accompany with a side of crusty bread to soak up the delicious sauce.

Pair with a simple Greek salad for a complete meal.
