Ingredients

1 large head of romaine lettuce, finely chopped

4-5 green onions, finely chopped

1 small bunch of fresh dill, chopped

1 small bunch of fresh mint, chopped

Juice of 1 lemon

4 tbsp extra virgin olive oil

Salt and freshly ground black pepper, to taste

Directions

Prepare the Lettuce:Wash and dry the romaine lettuce thoroughly.

Finely chop the lettuce and place it in a large salad bowl.

Finely chop the green onions, dill, and mint. Add them to the bowl with the lettuce.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.

Pour the dressing over the salad and toss gently to combine, ensuring all the ingredients are evenly coated with the dressing.

Top with some olives if desired.

Serve immediately as a refreshing side dish or light main course.
