Mediterranean Lamb Souvlaki





Souvlaki is a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer. It is usually served with grilled bread, or in a pita wrap with garnishes and sauces, or on a dinner plate, often with french fries.  The meat usually used in Greece and Cyprus is pork, although chicken and lamb may also be used.





For the marinade:
*1/2 cup Greek Olive oil
*Juice of 1 lemon
*2 cloves garlic, minced
*1 tbsp Greek dried oregano
*1 onion, chopped
*1 tsp Mediterranean all spices
*1 tsp Sea salt
*1 tsp pepper
*1 Kg lamb leg or shoulder cut into chunks
*1 onion , cut into large pieces
*1 green bell pepper, cubed
*1 yellow bell pepper, cubed
*1 red bell pepper, cubed
*Kebab skewers  ( if you use wooden skewers you’ll need 70ml white wine )






If you use wooden skewers place them into a small baking pan  and add the white wine.
Let them soak in the wine. It would be best if they soak for at least 2 hours.

In a large and deep dish, combine the marinade ingredients.
Add the cubed meat to the marinade, and work the meat into the marinade well with your hands. Cover and refrigerate for a few hours or overnight.

When ready, thread the meat cubes, bell peppers cubes and onion, alternately onto the skewers.

Place a grill pan over high heat and let it get very hot. Cook over a grill until they cook through and brown nicely.

Serve with Greek pita bread, Tzatziki dip  and Greek salad .
