Patatosalata / Greek Potato Salad

Ingredients :

2 pounds potatoes

2 tbsp fresh dill, chopped

1/2 cup Greek olive oil

1 tsp oregano

2 fresh green onions, chopped

Vinegar or lemon juice

Directions :

Wash potatoes and boil for about 45 minutes, until pierced easily with a fork.

Once potatoes are boiled run through cold water and peel.

Cut potatoes in your preferred shape and place in a bowl.

Add dill, oregano and onions.

Mix the olive oil with the lemon juice (or vinegar) and add to the potatoes and mix gently.
