Ingredients

1 package of phyllo dough (about 16 sheets)

2 cups feta cheese, crumbled

1 cup myzithra or ricotta cheese

2 eggs

1/4 cup chopped fresh parsley

1/4 tsp Black pepper

1/4 cup olive oil (for brushing)

Directions

Preheat your oven to 375°F (190°C).

Line a baking sheet with parchment paper.

In a mixing bowl, combine the feta, myzithra, eggs, parsley and pepper.

Mix well until everything is evenly combined.

Lay out one sheet of phyllo dough on a clean surface and brush it lightly with olive oil.

Place another sheet of phyllo dough on top and brush with olive oil again.

Repeat until you have a stack of 4 sheets.Cut the stacked phyllo dough into 3 equal strips lengthwise.

Place a spoonful of the cheese mixture at the bottom of each strip.

Fold one corner of the phyllo dough over the filling to form a triangle, then continue folding, maintaining the triangle shape until you reach the end of the strip.

Repeat with the remaining strips and filling.

Place the triangles on the prepared baking sheet and brush the tops with olive oil.

Bake in the preheated oven for 15-20 minutes, or until the triangles are golden brown and crispy.

Remove from the oven and let cool slightly before serving. Enjoy your homemade Tyropitakia!
