KAYANA EGGS

Kayana is an easy, healthy breakfast (or any time of day) recipe in Greece and other parts of the Mediterranean.
It’s a simple combination of simmering tomatoes, onions, garlic, spices and eggs. It’s nourishing, filling and one recipe I guarantee you’ll make time and again.

Cook Time: 20 min
Servings: 6 servings

Ingredients

1/3 cup olive oil
1 medium onion, chopped
1 green bell pepper, seeded and diced
1 garlic clove, finely chopped
2 teaspoon paprika
1 teaspoon cumin
200g tomatoes, grated
6 large eggs
150g Feta, crumbled
salt and pepper, to taste
1 small bunch fresh parsley, chopped (optional)

Directions

Heat the olive oil in a large saute pan on medium heat.

Add the chopped onion and bell pepper and cook for 5 min.

Add garlic and spices and cook an additional minute.
Pour the grated tomatoes , stir and simmer for 6-8 min. Crack the eggs into a bowl and beat them until lightly mixed.
Add the eggs in tomato sauce, season with salt and pepper and bring to a simmer.

Add the crumbled feta and remove from heat . Garnish with chopped parsley and serve.
