2 tbsp extra virgin olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 red bell pepper, diced

1 can (400g / 14 oz) crushed tomatoes

1 tbsp tomato paste

1/2 cup dry white wine

2 cups vegetable stock

1 tsp smoked paprika

1/2 tsp red pepper flakes (optional)

300g (10 oz) raw shrimp, peeled and deveined

500g (1 lb) mussels, cleaned and debearded

Salt & pepper to taste

Fresh parsley, chopped

Fresh thyme or oregano (optional)

Lemon wedges, for serving

Crusty bread, for dipping

Directions

Sauté the base:In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until soft. Stir in garlic and red bell pepper; cook for another 2–3 minutes.

Add tomato paste and stir until slightly caramelized. Pour in the white wine, scraping the bottom of the pot. Let it simmer for 2–3 minutes.3. Simmer:

Add crushed tomatoes, stock, paprika, pepper flakes, salt, and pepper. Bring to a simmer and let cook uncovered for 10–15 minutes to thicken slightly.

Add shrimp and mussels. Cover and cook for about 5–7 minutes, or until the shrimp are pink and mussels have opened (discard any that don’t open).

Sprinkle with fresh parsley and herbs.

Serve hot with lemon wedges and crusty bread.
