Christ’s Swaddling Clothes – Traditional Epirus Christmas Pancakes.

In the mountains of Epirus, Christmas begins with a humble yet symbolic sweet called Christ’s Swaddling Clothes (Spargana tou Christou). These delicate syrup-soaked pancakes represent the swaddling cloths that wrapped the newborn Christ and are one of Greece’s most heartwarming holiday traditions.

Made with just a few simple ingredients—flour, water, walnuts, and a touch of cinnamon—this ancient dessert is a beautiful reminder that festive joy often comes from the simplest of things. Light, soft, and subtly sweet, they are served warm, drizzled with syrup, and sprinkled generously with crushed walnuts.

1 kg all-purpose flour

a pinch of salt

water, as needed

plenty of finely chopped walnuts

cinnamon (optional)

For the syrup

1 liter water

500 g sugar

In Epirus, these syrup-soaked pancakes, known as Christ’s Swaddling Clothes (Spargana tou Christou), are traditionally made at Christmas as a symbol of the swaddling bands that wrapped the newborn Christ.

Directions

Bring the water and sugar to a boil and simmer together for 7–8 minutes, counting from the moment it starts boiling. Keep the syrup warm.

Place the flour and a pinch of salt in a large bowl and mix.Make a well in the center and gradually pour in water, stirring in a circular motion to incorporate the flour from the sides toward the center. Add as much water as needed to create a medium-thick batter that drips slowly from a spoon.

Heat a large non-stick pan over medium heat until hot.

Pour in one ladleful of batter—just enough to cover the bottom in a thin layer.

Cook until the bottom side is dry and lightly golden, then flip and cook the other side.

Transfer each crepe to a plate and sprinkle with ground walnuts (and cinnamon, if using). Continue until you have about 10 crepes.

Stack them, cut all in half (or into quarters), and drizzle with half of the warm syrup.

Repeat with the remaining batter to make another batch of crepes, sprinkle each with walnuts, cut, pour over the rest of the syrup, and serve warm.
