CHEESE & HAM CROQUETTES

Super crisp on the outside and creamy on the inside, these two-bite party snacks are amazingly delicious !!

Ingredients

200g (7oz) mozzarella cheese, shredded

100g mild cheddar cheese, shredded

100g (3.5oz) Greek kefalograviera cheese, shredded

100g (3.5oz) Philadelphia cream cheese

1 cup cooked ham, chopped (optional)

1 egg + 1 egg, beaten

1 tbsp flour

Zest of one lemon

1/3 tsp pepper

Olive oil, light, for frying

1½ cups plain breadcrumbs

1½ cups flour for coating

Directions

In a bowl, thoroughly mix all the ingredients except for the beaten egg and breadcrumbs.

Form the mixture into small balls.

Coat each ball by rolling it in flour, dipping it in the beaten egg, and then covering it with breadcrumbs.

In a large skillet, heat the oil over medium heat.

Fry the croquettes until they’re golden brown, turning them so they cook evenly on all sides.

Once done, place the croquettes on a paper towel to drain. Allow them to cool for about 3 minutes before serving.
