No Bake Cherry Vanilla Icebox Cake

NO BAKE CHERRY VANILLA ICEBOX CAKE

Ingredients:

*2 boxes of Vanilla instant pudding

*1 tsp Vanilla extract

*2 pkt Petit beurre biscuits

*220 g / 7.7oz Fresh Whipped cream

*300 g / 10.5oz cherries

 

 

 

Directions:

 

Prepear vanilla pudding according box instructions and set aside.

With a hand mixer or in the bowl of a stand mixer, whip the cream and vanilla extract until it just holds, stiff peaks. ( Add sugar if desired)

Arrange petit beurre in the bottom of a rectangular container. Spread half the pudding mixture over the biscuits.
Place the cherries in a single layer over the pudding. Repeat with remaining biscuits , pudding mixture and cherries
Top with whipped cream and cherries. Chill for at least 4 hours before serving.
