NO BAKE LEMON ICEBOX CAKE

Ingredients:
*2 boxes of lemon instant pudding
*1 tsp vanilla extract
*2 pkt of cream crackers or petit beurre biscuits
*220 g / 7.7 oz Whipped cream
*Zest of one lemon
*Juice of one lemon
Directions:
Prepare the lemon pudding, according the box directions.
Add in the lemon zest and the vanilla extract . Set aside.
With a hand mixer or in the bowl of a stand mixer, whip the cream and fresh lemon juice, until it just holds, stiff peaks. (Add sugar if desired )
Arrange biscuits in the bottom of a dish.
Spread half the pudding mixture over the biscuits
Repeat with remaining biscuits and pudding mixture.
Top with whipped cream.
Chill for at least 4 hours before serving.
