Sea Urchin and how to enjoy it

The sea urchin hides the saltiness and the smell of the sea and has a truly unique taste. Sea urchin is very easy to eat. After removing it from the rock (preferably with gloves), we cut the shell around the side where the mouth is with a pair of scissors, remove all the entrails and rinse it on the spot with sea water. only the coral eggs remain inside the shell, which we remove with a spoon and either transfer them to a plate, or put them back inside the shell.

This delicacy is eaten raw and is often featured in the cuisines of most Mediterranean cultures. The best way to eat sea urchins is by carefully dipping a piece of soft white bread directly into the shell and scoop out the meaty orange center, while trying to avoid any piece of shell or spine remaining from the opening process.
