Souvlaki is a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer.
It is usually served with grilled bread, or in a pita wrap with garnishes and sauces, or on a dinner plate, often with french fries. The meat usually used in Greece and Cyprus is pork, although chicken and lamb may also be used.
Simple to make, loaded with classic Greek flavours: chicken marinated in lemon, garlic and dried oregano and thyme, then threaded onto skewers. Served with a homemade Tzatziki and tomatoes , all bundled up in pita bread.

4 Chicken breast and thighs mixed
2 bell peppers optional
juice of 1 lemon
1 garlic clove, minced
1 tbsp Greek dried oregano
1 tsp dried thyme
1 tsp sumac, optional
1/2 cup Greek Olive oil
tomatoes, pita bread and tzatziki sauce to serve

Directions
If using wooden skewers, pla e them in a dish , cover with vinegar and set aside.
Cut the chicken breasts into equal sized pieces (2-3 cm thick). Cutting the meat in this ways helps the meat cook evenly.
Transfer to a deep baking pan.
Add in the olive oil, lemon juice, minced garlic, oregano, thyme, sumac, salt and pepper. Mix with a wooden spoon. Set aside for at least 20 minutes.
If using peppers, cut them into chunks then alternate threading the chicken and pepper pieces onto the skewers.
Place a grill pan over high heat and let it get very hot. Cook over a grill until they cook through and brown nicely.
Sprinkle with more oregano and salt and serve with Greek pita bread, Tzatziki dip and Greek salad .
