Greek yogurt blueberry cake

1 cup (250 g) Greek yogurt

3 large eggs

½ cup (120 ml) light olive oil or butter

1 cup (200 g) sugar

2 cups (250 g) all-purpose flour

2 tsp baking powder

1 tsp vanilla extract

1 cup (150 g) fresh blueberries

A pinch of salt

Directions

Preheat your oven to 350°F (175°C). Grease and flour a bundt pan (or loaf pan).

In a large bowl, whisk together yogurt, eggs, oil, sugar, and vanilla until smooth.

In another bowl, sift flour, baking powder, and salt. Gradually fold into the wet mixture.

Gently toss the blueberries with a teaspoon of flour to prevent them from sinking, then fold them into the batter.

Pour the batter into the prepared pan and smooth the top.6. Bake for 40–45 minutes, or until a toothpick comes out clean.

Let it cool before removing from the pan. Dust with powdered sugar or drizzle with a light glaze if desired.
