250 g halloumi cheese (cut into thick slices)
1–2 tablespoons olive oil
2 tablespoons Greek honey
A few fresh thyme sprigs (or oregano)
Freshly ground black pepper
Lemon wedges (for serving)
Directions
Prepare the cheese: Slice the halloumi into 1–2 cm thick slabs. Pat dry with paper towels.
Heat the pan or grill: Brush a grill pan (or outdoor grill) lightly with olive oil. Place over medium-high heat until hot.
Grill the halloumi: Lay the cheese slices on the grill. Cook for about 2–3 minutes per side until golden brown with charred grill marks.
Plate and drizzle: Transfer the hot halloumi to a serving plate. Drizzle generously with Greek honey and sprinkle fresh thyme over the top.
Finish and serve: Crack black pepper on top and serve immediately with lemon wedges on the side.
