This Mediterranean Chicken Bowl is one of those simple everyday meals that deliver everything you need in one place. Chicken
1 large chicken breast, sliced
1 tablespoon olive oil
Salt, pepper, oregano
A squeeze of lemon
1 cup dry bulgur
Water for soaking
1 tablespoon olive oil
Salt, pepper
A handful of chopped parsley
A small handful of lettuce, chopped
A small handful of arugula
Cherry tomatoes, halved
Cucumber, thinly sliced
Kalamata olives
Feta, crumbled or cubed
Fresh herbs
Dressing
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey
Salt, pepper
A pinch of oregano
Directions
Season the chicken with olive oil, salt, pepper, and oregano. Cook in a pan until golden and fully done. Let it rest, then slice.
Place the dry bulgur in a container. Cover fully with water.Let it sit until it absorbs the water and softens.Drain very well, then mix with olive oil, salt, pepper, and parsley.
Place the chopped lettuce and arugula at the base of the bowl.
Add the bulgur on top of the greens.Arrange the sliced chicken, tomatoes, cucumbers, olives, and feta around the bowl exactly as shown in the photo.
Whisk olive oil, lemon juice, honey, salt, pepper, and oregano. Drizzle over the bowl.
Top with fresh herbs and a little extra feta.
