Mediterranean Chicken Skillet

MEDITERRANEAN CHICKEN SKILLET

Need a family-friendly dinner in a hurry? Try this super easy, one pan Mediterranean chicken skillet and you’ll love it.

 

 

 

Ingredients:

 

*4 boneless skinless chicken breasts, cut into pieces

*1 ½ cups fresh mushrooms, sliced

*1 onion, chopped

*1 clove garlic, minced

*1/3 cup Olive Oil

*½ cup chicken broth + 1 tsp mustard + juice of ½ lemon

*1 tomato, cut into wedges

*1 yellow bell pepper, sliced

*2 tsp dried oregano

*Salt to taste

*Fresh ground pepper

*Fresh parsley for garnish

 

 

Directions:

 

In a small bowl whisk chicken broth, juice of 1 lemon and 1 tsp mustard. Set aside.

In a large nonstick skillet heat the olive oil , add the chicken, onion and cook for 6 min

Add the garlic, mushrooms, oregano, yellow pepper and cook for 6 min more.

Add the chicken broth , salt, season with pepper and simmer for 15min or until chicken is tender.

Remove from heat, top with tomato wedges , sprinkle with fresh parsley and feta cheese( optional ) and Serve.
