Directions
200 g (7 oz) goat cheese, room temperature
100 g (3.5 oz) Greek yogurt (for extra creaminess)
1 tablespoon olive oil (plus more for drizzling)
1 small garlic clove, minced (optional)
Salt & freshly ground black pepper, to taste
2 small cooked beets, sliced
Fresh parsley, for garnish
Directions
Whip the Cheese:
In a food processor or with a hand mixer, blend the goat cheese, cream cheese (or yogurt), olive oil, and garlic until smooth and creamy. Season with salt and pepper to taste.
Plate It:
Spread the whipped cheese onto a shallow bowl or plate, swirling it gently with the back of a spoon.
Top It:
Arrange the sliced beets on top of the cheese. Drizzle generously with olive oil.
Finish & Serve:
Sprinkle with fresh chopped parsley and a touch of cracked pepper.
