TZATZIKI / Greek Yogurt Dip

1 large cucumber

2 cups Greek yogurt

2 cloves garlic, minced

2 tbsp olive oil

1 tbsp vinegar or lemon juice

1 tbsp chopped fresh dill

Salt and pepper to taste

Directions

Grate the cucumber using a box grater or food processor.

Place the grated cucumber in a fine mesh sieve or cheesecloth, sprinkle with a little salt, and let it sit for about 10 minutes to release excess moisture.

Squeeze out any excess moisture from the grated cucumber using your hands or by pressing it with the back of a spoon.

In a mixing bowl, combine the Greek yogurt, minced garlic, olive oil, lemon juice or vinegar and chopped dill.

Stir in the grated cucumber and mix well to combine.

Season with salt and pepper to taste.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serve chilled as a dip with pita bread, veggies, or as a sauce for grilled meats
