Ingredients

2 medium potatoes, peeled and grated

2 large carrots, peeled and grated

1 cup finely shredded cabbage

1 small onion, finely chopped

2-3 green onions, finely chopped (optional)

1/4 cup all-purpose flour

2 tbsp cornstarch (helps with crispiness)

1/2 tsp baking powder

2 eggs

Salt and pepper to taste

1/2 tsp garlic powder (optional)

Oil for frying

Directions

Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out excess water.

Do the same for the grated carrot to ensure the fritters stay crispy.

In a mixing bowl, combine the potatoes, carrot, cabbage, chopped onion, and green onions (if using).

Add the flour, cornstarch, baking powder, salt, pepper, paprika, and garlic powder. Mix until everything is well combined.

Heat about 1/4 inch of oil in a large skillet over medium heat.

Scoop out a spoonful of the mixture and shape it into a small patty with your hands. Carefully place it in the hot oil.

Repeat with the remaining mixture, being careful not to overcrowd the pan.

Cook each fritter for about 3-4 minutes per side, or until golden brown and crispy.

Transfer to a plate lined with paper towels to absorb any excess oil.

Serve the fritters hot with your favorite dipping sauce such as yogurt dip, and garnish with fresh herbs if desired.
