Homemade Peach Iced Tea with Greek Mountain Tea & Thyme Honey

A naturally caffeine-free summer refreshment inspired by the heart of Greece

There’s something magical about sipping a cool, fragrant tea on a hot summer day — especially when it’s made with the flavors of the Mediterranean.

This iced tea recipe blends the sweetness of ripe peaches with the calming aroma of Greek mountain tea (tsai tou vounou) and the rich depth of thyme honey.

It’s a light, refreshing drink that feels like a breeze from the Aegean.

What makes it truly special is the use of traditional Greek ingredients.

Perfect for warm afternoons, family gatherings, or simply treating yourself with something wholesome and delicious.

3 ripe peaches ( 2 diced, 1 thinly sliced)

½ cup Greek thyme honey

8 cups water, divided

2–3 tablespoons dried Greek mountain tea (sideritis)

1 large lemon, sliced

½ cup fresh mint leaves (plus more for garnish)

Directions

Make the peach syrup:In a small saucepan, combine the 2 diced peaches, thyme honey, and 1 cup water. Bring to a gentle simmer and cook for 5 minutes until the peaches soften. Remove from heat, let it cool, and strain to get the flavored syrup.

Bring 4 cups of water to a boil. Add the dried mountain tea and simmer for 8–10 minutes. Strain and let cool to room temperature.

In a large pitcher, combine the brewed tea, peach syrup, and the remaining 3 cups of cold water. Add the peach slices, lemon slices, and fresh mint leaves. Stir gently.

Refrigerate for at least 4 hours (or overnight) to let the flavors blend beautifully.

Pour over ice and garnish with extra lemon wheels and mint sprigs.
