Oven Baked Doner Kebab

If your social media feeds are full of people spreading ground meat on parchment paper and baking it into thin, crispy doner-style strips, you’re not imagining it.

This recipe has officially gone viral and for good reason. It’s fast, it’s budget-friendly, and it tastes shockingly close to authentic doner kebab you’d get at a street shop.

Meat Mixture

1 lb ground beef or lamb (80/20)

2 tablespoons Greek yogurt

½ onion

2 garlic cloves

1 teaspoon kosher salt

1 ½ teaspoons cumin

1 teaspoon ground coriander

1 teaspoon paprika

1 teaspoon garlic powder

To Serve

pita bread, lavash, or regular bread

pickles, cabbage, salad, tomatoes, French fries

Directions

Preheat the oven.

Set the oven to 400°F and line a sheet pan with parchment paper.

Prepare the aromatics.

Blend the onion and garlic in a food processor for about 2 minutes, scraping the sides halfway through, until very finely minced.

Season the meat.

In a medium bowl, combine the ground meat with all the spices, yogurt and the onion-garlic mixture. Mix thoroughly by hand until the mixture is cohesive. Divide into 5 equal portions.

Shape the doner sheets.

Place each portion between two sheets of parchment. Press gently, then roll with a rolling pin until thin—flat and flexible, not paper-thin.

Fold and arrange.

Remove the top parchment and fold the bottom parchment over the meat to create long, flat “logs.” Transfer each piece to the prepared tray and repeat with the remaining mixture.

Bake.

For softer, juicy doner: bake for 20 minutes, then unroll the pieces back onto the tray to absorb the juices.For crisp edges and a light char: bake 15–17 minutes, then unwrap, spread out, and broil for 2–3 minutes, watching closely.

Serve.

Slice or tear the doner into strips. Serve with pita, lavash, or regular bread, along with pickles, cabbage salad, tomatoes, and fries.
