Greek Loukoumades Filled with Creamy Anthotyro, Honey & Sesame

These loukoumades are not the classic syrup-soaked version.They are lighter, more elegant, and built around balance.

Crispy on the outside, warm and airy inside, then gently filled with a soft, creamy Greek cheese. Finished with golden honey and toasted sesame seeds, they sit perfectly between sweet and savory.

This is the kind of dish you find in a good meze place in Greece, served warm, meant to be shared, and eaten slowly.

The secret is not stuffing the dough before frying. Loukoumades batter is naturally loose. Instead, the cheese is prepared as a smooth cream and piped into the loukoumades while they are still hot. The warmth softens the cheese instantly, creating a creamy center without heaviness.

For the loukoumades batter

250 g all purpose flour

1 teaspoon instant dry yeast

1 teaspoon sugar

½ teaspoon salt

250 ml lukewarm water

1 tablespoon olive oil

For the cheese cream filling

180 g fresh anthotyro

50–70 g feta

1–2 tablespoons warm milk or cream, as needed

The result should be smooth, pipeable, not salty.

Oil for frying

Good quality honey

White and black sesame seeds

Directions

In a bowl, mix flour, yeast, sugar, and salt.

Add lukewarm water and olive oil. Stir until you have a loose, sticky batter.

Do not knead.

Cover and let rise for 45 to 60 minutes, until bubbly and airy.

Heat oil to medium heat, not too hot.

Using two spoons or a small ice cream scoop, drop spoonfuls into the oil.

Fry in batches, turning often, until golden and cooked through.

Remove and drain briefly.. They must be hot when filled.

Mash anthotyro and feta together until smooth.

Add warm milk or cream gradually until you get a soft, creamy texture. Transfer to a piping bag with a narrow tip.

Pierce each hot loukoumades gently with the piping tip. Pipe a small amount of cheese cream inside.

Because the loukoumades are hot, the cheese softens and slightly melts.

Arrange on a plate. Drizzle with honey.Sprinkle generously with white and black sesame seeds.

Serve immediately.
