400 g / 14 oz feta cheese

200 g / 8 oz mizithra cheese

2 eggs

100-120 g / 4 oz butter

½ tsp black pepper

10-12 phyllo dough sheets

Sesame seeds, optional

Directions

Crumble the feta cheese into a bowl and add the mizithra cheese, eggs, and pepper.

Mix everything well with a fork, then divide the mixture into 5 equal portions.

Melt the butter over low heat.

Lay out one sheet of phyllo dough and brush it with some melted butter. Cover the remaining phyllo sheets with a towel to keep them from drying out.

Place a second sheet of phyllo sheet on top of the first, then spoon one of the cheese portions along one edge of the dough.

Carefully roll the phyllo lengthwise around the filling while brushing it with butter as you go. Once rolled, coil the phyllo into a spiral and place it in a buttered oven dish.

Repeat this process with the remaining four portions of filling.

After all five spirals are in the pan, lightly brush the tops with butter, sprinkle with a little water, and add sesame seeds, optional.

Bake in a preheated oven at 175°C (350°F) for 45-50 minutes, or until golden brown.
