4 tbsp olive oil or melted butter

400g feta cheese, cut into 4 rectangular pieces

4 large phyllo dough sheets

2 tbsp sesame seeds

Honey, for drizzling

Directions

Preheat the oven to 180°C (350°F)

Prepare the phyllo: Lay out a sheet of phyllo and brush it with melted butter or olive oil and fold it in half.

Wrap the feta: Place a piece of feta near one end of the phyllo and fold it over, wrapping tightly like a parcel.

Brush with butter as you fold to seal.

Repeat for all four pieces.

Top & Bake: Place the wrapped feta on a baking sheet, brush with more butter, and sprinkle sesame seeds on top. Bake for 20-25 minutes, until golden and crispy.

Serve: Drizzle with honey, garnish with fresh thyme,(optional), and serve warm with mixed salad leaves.
