Ingredients
1 medium beet
1 Cucumber, grated
250g Greek yogurt
1 garlic clove, finely minced
3 tbsp chopped fresh dill
a squeeze of lemon to taste
3 tbsp of olive oil
Directions
To prepare the Tzatziki, begin by cooking the beet. The quickest method is to simmer it in a pot of water, covered, until it’s just tender enough to be cut with a knife.
Once cooked, run it under cold water and rub off the skin, which should slide off easily.Next, grate the beet and set it aside.
While the beet is cooking, grate a cucumber and place it over a strainer, salting it and allowing it to drain for 10 minutes.In a separate bowl, mix together the yogurt, olive oil, herbs, garlic, grated beet, and cucumber.
Ensure all ingredients are well combined. Season with salt, pepper and lemon juice to personal preference before refrigerating until serving.
To present, serve the Tzatziki in a wide, shallow bowl.
