Mediterranean Bread Loaf

Just baked this delicious, cheesy vegetable bread loaf with a secret ingredient—Greek yogurt!

It’s soft, packed with fresh veggies, and has just the right amount of cheesy goodness in every bite. Perfect as a snack or a side, and it makes the kitchen smell amazing!

What’s in it? A mix of colorful veggies, a generous sprinkle of cheese, and a touch of Greek yogurt for that moist, tangy twist. It’s like comfort food, but with a healthy kick!

1 1/2 cups all-purpose flour (or whole wheat flour for a healthier version)

1/2 cup Greek yogurt

1/4 cup olive oil or melted butter

2 large eggs

1 cup crumbled feta cheese

1 cup shredded Greek kaseri, or a mix of your choice

2 cups mixed vegetables, chopped (spinach, carrots, etc.)

1/4 cup green onions

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp black pepper

1 tsp garlic powder (optional, for added flavor)

1 tsp dried oregano

Directions

Preheat your oven to 175°C.

Grease a 9×5-inch loaf pan or line it with parchment paper.

In a large mixing bowl, whisk together the Greek yogurt, olive oil (or melted butter), and eggs until smooth.

Fold in the cheeses mixed vegetables, and green onions into the wet ingredients.

Mix gently until everything is well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and dried oregano.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Avoid overmixing to keep the bread light and fluffy.6. Bake:

Pour the batter into the prepared loaf pan, spreading it evenly. Sprinkle with some shredded kaseri.

Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Slice and serve warm or at room temperature.

Notes

No need to cook the veggies first.

Chopping them into small pieces will ensure they cook through while baking, keeping their texture and adding freshness.

However, we can lightly sauté or steam the carrots before to soften them up, optionally.

Tips

Additional Mix-Ins: Try adding some chopped olives, sun-dried tomatoes, or even a handful of nuts for extra flavor and texture.
