IngredientsFor the Salad
2 cups cooked pasta (like penne or rotini)
2 cups cooked chicken breast, sliced or shredde
2 cups fresh spinach leaves
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
Salt and pepper, to taste
For the Lemon Olive Oil Dressing
1/4 cup extra virgin olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 clove garlic, minced
1/2 tsp Dijon mustard
1/2 cup crumbled feta cheese
Salt and pepper, to taste
Directions
Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, feta, salt, and pepper until well combined.
In a large bowl, combine the cooked pasta, chicken, spinach, cherry tomatoes, cucumber, and red onion.
Pour the dressing over the salad. Toss gently until all ingredients are well coated.
Season with additional salt and pepper if desired, and serve chilled or at room temperature.
