1/3 cup tahini (well stirred)
1–2 garlic cloves, minced
3 tbsp fresh lemon juice (about 1 lemon)
2 tbsp olive oil (optional, for extra richness)
1–2 tsp honey (optional, for balance)
1/4 tsp sea salt (or to taste)
4–6 tbsp cold water (adjust for desired consistency)
Optional add ins:
A pinch of cumin or paprika for warmth
1 tsp grated fresh ginger for a twist
A little chopped parsley for freshness
Directions
In a bowl, whisk together the tahini, lemon juice, garlic, olive oil (if using), sweetener, and salt.
Gradually add cold water, a tablespoon at a time, whisking until smooth and creamy.
Adjust salt, lemon, or sweetness to taste.
Store in the fridge for up to 5 days. It may thicken—just whisk in a bit of water to loosen.
